What Do Vegetarians Eat?

Hard to resist the Indian Feast at The Grit. Some kind of curried carrot dhal, spicy potatoes with tomatoes, saffron rice, extremely spicy curried cauliflower with spinach, and tandoori fried tofu in a coconut cream curry, fresh naan with homemade peach chutney and mint chutney.

I would gladly (well,not gladly but at least without too much kicking and screaming) become a vegetarian if it meant that someone would cook me Indian meals for the rest of my life.
